2012 Muré Crémant d'Alsace Brut

Villages : Rouffach, Westhalten, Soultzmatt   

Grapes: 20% each Pinot Noir, Pinot Blanc, Pinot Auxerrois, Pinot Gris, & Riesling

Vineyards: Sheltered by the highest peaks of the Vosges mountains, this region of the Haut-Rhin enjoys a continental climate. The 35+ year old hillside vines face east and south-west. The calcareous susoil ensures good drainage.

Winemaking: Grapes are hand picked in early September to retain their natural acidity. The carefully selected grapes are pressed whole (without having been crushed or de-stemmed). The must is fermented in neutral wood casks using only wild yeast. The wine stays on its fine fine lees for 12 months and develops complexity and texture with regular stirrings. Gentle filtration is used to inhibit Malolactic fermentation. During the second fermentation, it gains elegance and fullness in the bottle. The wines stays on its lees a minimum of 18 months. The lees are taken out by disgorging and replaced by a low dosage (6gms/l). Disgorgement date on every bottle to ensure freshness.

2009 Muré Crémant d'Alsace “Grand Millésime”    

Villages : Rouffach

Grapes: 150% Riesling, 50% Chardonnay

Vineyards: Sheltered by the highest peaks of the Vosges mountains, the Rouffach region enjoy a continentale climate. Organically farmed. 25+ year old hillside vines face east and south-west. Shale and calcareous subsoil ensure good drainage.

Winemarking: grapes were hand picked September 2nd, 4th, and 6th to retain their natural acidity. Whole grapes (without having been crushed or destemmed) are pressed. Chardonnay must is fermented 'Sous Bois' (in barrels) using native yeasts. Only the chardonnay goes through malolactic fermentation. The Riesling is vinified on stainless and does note goes through FML. 18 months on lees with regular stirrings. During the second fermentation, it gains elegance and fullness in the bottle. The wine then spends 3 years sur latte before being disgorged. 0 dosage. Disgorgement date specified on every bottle. 250 cases produced.

Grapes: 100% Riesling 

Yield: 61 hl/ha

Vineyards: Sheltered by the highest peaks of the Vosges mountains, the Rouffach region enjoy a continentale climate. Organic/Biodynamic farming. The 45+ year old steep hillside vines face east and south-west. The calcareous subsoil ensure good drainage.

Winemaking: Grapes were hand picked on October 3rd in 20 kg boxes to protect the delicate flavors and preserve freshness; The must is slowly fermented in neutral wood casks using only wild yeasts. 9 months on lees in stainless with regular stirrings. 9,5 gms/L RS. 1000 cases produced.

It was planted in the 7th century by monks. Certified Biodynamic. 45+ year old steep hillside vines face south. Clay and limestone soil with many stones. Calcareous sandstone subsoil with galets.

Winemaking: Grapes were hand picked on October 11th in 20 kg boxes to protect the delicate flavors and preserve freshness. The must is slowly fermented in neutral wood casks using only wild yeasts. 9 months on lees in stainless with regular stirrings. 2,5 gms/L RS. 500 cases produced.

It was planted in the 7th century by monks. Certified Biodynamic. The 36+ year old steep hillside vines face south. The soil is clay and limestone and has many stones stones. The subsoil is calcareous sandstone with galets.

Winemaking: Grapes were hand picked on September 13th in 20 kg boxes to protect the delicate flavors and preserve freshness. The must is slowly fermented in neutral wood casks using only wild yeasts 9 months on lees in stainless with regular stirrings. 19 gms/L RS residual sugar. 300 cases produced.
